Pregame Pasta

It’s Friday night, and there’s a bottle of white in the fridge with your name on it. Surely, you could drink it all, but a girl’s gotta eat! As a self-proclaimed carb queen, I live for pasta. Sometimes we want to keep things trim and slim for the weekend, and I’ve created the perfect pasta dish that is simple to make and low calorie, too. Even though the weekend has started that doesn’t mean you can’t splurge and feel guilt free about it. Whole wheat noodles are graced with a white wine sauce and fresh vegetables – and don’t forget the cheese. You can use whatever wine you plan on drinking that night, but my favorite to both drink and cook with is Kim Crawford Sauvignon Blanc. This quick dish will make it easy for you to have a home cooked meal between getting home from work and heading out for cocktails to celebrate the start of the weekend.

Ingredients

  • 1 pound of whole wheat pasta (I love Bella Terra capellini)
  • 3 garlic cloves, minced
  • 1 – 7.5 oz container of Baby Bella mushrooms, roughly chopped
  • 2 cups of grape or cherry tomatoes
  • 1 tbsp of olive oil
  • 1/2 cup of dry white wine
  • 1/2 cup of low sodium chicken broth
  • Salt, pepper, crushed red pepper (to taste)
  • 4 tbsp of Parmesan cheese (optional)

Directions

  1. Mince garlic and roughly chop Baby Bella mushrooms to your liking.
  2. Bring water to a boil for pasta. Be sure to salt the water! Add pasta and boil for 10-12 minutes or until al dente.
  3. Add tbsp of olive oil to a hot sautee pan. Add mushrooms, garlic, salt, pepper and crushed red pepper.
  4. Once mushrooms begin to soften, add tomatoes to sautee pan.
  5. Strain pasta and set aside.
  6. Add white wine and chicken broth. Bring to a boil to reduce.*
  7. Once sauce is reduced, add cooked pasta to sauce and vegetables. Toss pasta with tongs until completely coated.
  8. Serve in a bowl with fresh Parmesan cheese.

*Having trouble reducing your sauce? Create a quick water and cornstarch mixture and add to your sauce to thicken it up!
