In my humble opinion, Fall is the best time for food…especially hearty Italian sausage skillets. It’s cooler weather, shorter days are just calling for a cozy meal at home that you don’t have to be guilty about! The main focus of this dish is the hot Italian sausage and how it beautifully marries into a rich, tomato sauce spiked with white wine. It’s a cozy dish for any fall day, and I hope you find comfort in it this season!
Hearty Italian Sausage Skillet
Ingredients:
- 1/2 cup of white wine
- 1/2 cup of chicken broth
- 1-2 cups of sliced tomatoes
- 1 can of artichoke hearts (no oil)
- 1 cup of fresh spinach
- 1 tbsp of fresh parsley
- 6 oz of orzo
- 3 Italian hot turkey sausage links
- olive oil spray
- crushed red pepper flakes
- salt
- pepper
Directions
- Begin browning your sausage in full links. Once they are about 1/2 cooked, pull them out of your skillet and slice into medallions. Add them about to the skillet.
- Once your medallions are beginning to get a bit crispy, add in your tomatoes. Allow the tomatoes to break down, and then add your white wine.
- Add your herbs, spices, and broth to your mix. Allow the skillet to simmer on low for about 10 minutes. While this is happening, get that pot of water to a boil and add your orzo.
- Once your orzo is cooked and strained, serve it out into 3 portions. Add your artichoke hearts and spinach to your skillet and allow the spinach to wilt down.
- Serve your sausage skillet over your orzo and garnish with fresh parmesan cheese!
