If you were a child of the 90s, you KNOW the love that was in a can of Spaghetti-O’s. Now, I’m not about to recreate it, but rather take inspiration for this quick, tomatey, noodly bowl of love. This inspiration from Spaghetti-O’s came out of the need for a quick lunch or dinner – I can assure you they’re not paying me to create this new take on the old classic…hence the selective name of “pasta-o’s!” Haha! Regardless, this is a new, quick favorite. It’s perfect for any week night where you don’t feel like cooking OR if you have kids and you want to share some of that 90s good life with them. Ingredients:
- 8 oz elbow noodles or other short pasta
- 8 oz tomato sauce
- 1 tbsp olive oil
- 3 cloves of garlic, grated
- 4 tbsp parmesan cheese
- salt, pepper, crushed red pepper – to taste
Directions
- Get that pot of water to a boil for your pasta, while you prepare your garlic.
- Add your pasta to the boiled water – make sure the water is salted!
- While your pasta cooks, add your olive oil and garlic to a sauce pan on medium heat.
- Once garlic is fragrant, add your tomato sauce, salt, pepper, and crushed red pepper. Simmer for 5-10 minutes, or until pasta is done cooking.
- Add your sauce to your cooked pasta.
- Serve your pasta with parmesan cheese. This dish is best served with an old friend (or LOVER) watching old school cartoons.
