Is there anything more indulgent than truffles? How about a cheesy black truffle pasta? I’m convinced you can sprinkle truffles on anything it’d be great. Seriously, I dare you to challenge me. Anyway, I recently came across Sabatino Truffle Zest. Seeing as I’m not made of money and can’t just spring to buy a chunk of fresh truffles, I went for it. I ordered it online, and when it finally arrived, my mailbox reeked of truffles. I knew this was going to be good. The excitement to try this was there, but still wanted something healthy. First of all, I grabbed some mushrooms and whole wheat pasta, and then I made a meal of it. The fresh, nutty parmesan cheese paired with woodsy mushrooms and whole wheat pasta was the perfect combination to try out this truffle zest.

Ingredients
- 7.5 oz of baby bella mushrooms, sliced (or any preferred mushroom)
- 2 cups of chopped yellow onions
- 6-8 cloves of garlic (trust me on this)
- 1 pound of your favorite pasta (I used Bella Terra Whole Wheat Capellini)
- 1 tbsp of olive oil
- 3 tbsp of chicken broth
- 8 tbsp of parmesan cheese
- General seasoning – Salt, pepper, etc. to taste
- Sabatino Truffle Zest, to serve
Directions
- First things first, get a pot of salted water boiling to prepare to cook the pasta.
- Chop up onion, garlic and mushrooms.. Add olive oil to a hot frying pan and add in the onions and garlic.
- Season onions and garlic with salt and pepper. You can add dashes of other spices like I did, including garlic powder, onion powder and crush red pepper flakes.
- Once water is brought to a boil, add in your pasta. Cook pasta for about 10-12 minutes, depending on how al dente you like it.
- While onions begin to soften (but not totally cooked through), add in the mushrooms.
- Once mushrooms and onions are cooked through, add in the chicken broth. Bring to a simmer.
- Strain pasta and add to the mushroom and onion mixture. Toss until completely coated.
- Add in 4 tbsp of the parmesan cheese into the pasta. Toss until completely melted.
- Serve pasta into four bowls and top with 1/2 tsp of truffle zest and 2 tbsp of parmesan cheese. Add more or less truffle zest, to your preferred taste.
